A box of pasta + cheese + veggie = dinner! Yield: 4 servings Hands-on prep time: 15 minutes... Total prep time: 45 minutes Price per serving: $1.25 Ingredients 1 lb. jumbo pasta shells 1 16-oz. container cottage cheese 1 cup frozen spinach, thawed 1 cup shredded Muenster cheese 1 cup shredded mozzarella cheese, divided 1 egg, beaten 1 32-oz. jar marinara sauce Directions Preheat oven to 350 F. Cook pasta in boiling salted water and remove from heat three minutes earlier than box recommends. Drain, rinse and set aside. In a small bowl, mix cottage cheese, spinach, Muenster cheese, 1 cup mozzarella cheese and beaten egg. Coat bottom of a large baking pan with a thin layer of marinara sauce. Fill each shell with a spoonful of mixture and place in pan, seam-side down. Sprinkle remaining mozzarella cheese over the shells. Bake for 30 minutes or until mixture is melted and bubbly.

Cost per serving: $1 Ingredients: 1 lb. linguine pasta 2 tablespoon butter 10 ounces (one box) of fresh white mushrooms, cleaned and sliced 2 tablespoons flour 1 tablespoons lemon juice 4 cloves of garlic, minced 1 teaspoon salt teaspoon ground black pepper teaspoon onion powder teaspoon garlic powder 2 cups whole milk Directions: Cook linguine according to package instructions. Drain, reserving 1 cup of cooking liquid. Melt butter in a large skillet over medium-low heat. Add mushrooms and allow to simmer for 10 minutes, covered. Stir flour into mushrooms. Add lemon juice and spices. Mix until smooth. Add milk and cup reserved cooking water to pan. Raise heat and stir until mixture comes to a boil and starts to thicken. Add pasta to skillet and toss thoroughly to coat. Thin sauce with additional cup reserved cooking water, if necessary.

If you don’t already have one, decide on a strategy to pay them off! Automate your savings contributions, setting up monthly or weekly transfers. Look at your financial goals and assess your progress, and make sure you’re also not neglecting your retirement accounts. Next, if the pandemic has taught us anything, it’s that having an ICE (In Case of Emergency) folder is vital. Keep everything someone might need to handle your affairs from passwords to your living will if you’re suddenly incapacitated. Finally, set new goals for 2021, and hope we’ll all be able to pursue them without masks at some point!
