Bad news good people; we will be closed this Sunday. We need an extra day off to take care of some overdue housekeeping and get ready for next week’s challah orders. We also wanted to let you know that we are on track for a new oven installation at the beginning of October. Taking apart our old oven and building a new one in its place is a two-week affair, so we just wanted to give you a heads up. - One last thing get your challah orders in NOW! Palestinian bakers have been baking Ka’ek al Quds (Jerusalem Bread) for centuries. While some would call this a Jersulem Bagel, it’s not boiled, nor is it made with barley malt syrup. And of course, it’s not from Poland either; it’s an Arabic bread. But according to at least one Jerusalem baker, these were brought over with the Turks (Simit bread) during the Ottoman rule of Palestine, which began around 500 years ago. - We had been thinking about making a sesame bre...ad again at Allegro since we discontinued our honey sesame loaf. A few days ago, Nick @wildsciencebread and I put our heads together and came up with this recipe. We are saving our sourdough discard, which while not much, added up to 4-5 bags of flour (200-250lb) a year. Like traditional Jerusalem Bread, it’s enriched with some milk, sweetener, and oil (we used oatmilk, agave, and olive oil), but it contains no baking soda or instant yeast and instead is entirely naturally leavened and fermented overnight. The traditional recipe is all-purpose flour, but here we used bread flour along with a good amount of spelt flour and whole wheat flour. BABKA!!! Every Friday and Saturday we bake a few of these. In case you haven't had one yet, we make these on Wednesday and Thursday, and then ferment them for about 48 hours before baking them. The filling is chocolate coffee cardamom, which we also started using in our rugelach. The stuff is pretty magical. - On another note, though we'll be open normal hours on Sunday, July 4th, it will just be the bakery. Food menu will not be available. Sorry to bring you some sad news. Today we are closing for the indefinite future. This is the first time we have done this in over 15 years and it feels really strange. We will re-open when it is safe. We know that many of you count on us for your daily bread and we're sorry that we won't be here for you during these trying times. Like many other food businesses, we've struggled the last few weeks, especially in running the retail store. It sometimes seems to have made ...sense, like when someone came in and stocked up on bread. Other times, we wondered what we were doing peddling cupcakes to the passerby in the middle of a pandemic. We promise we'll be back as soon as possible, and in the meanwhile we'll be working on some new things to bring to you when we re-open. Wishing you all a safe and healthy few weeks....or months.
