I get knocked down, but I get up again! (Have fun getting that out of your head!) So, what does our Vecchio (ricotta salata) have to do with Chumbawamba? At the peak of Vecchio’s maturity, it goes through a process called knock-down where the top layer of the rind is brushed away to reveal a hidden layer underneath. This bottom layer, Vecchio’s actual rind, is what gives the cheese its unique taste and appearance. As we’ve briefly covered before, this rind is natural,... safe to eat, and pretty tasty! Cheese making is something that everyone knows that we do. But did you know that during the average day at CBC we spend more man hours cleaning than making cheese? We have a dedicated team that ensures the overall sanitation of the plant and every piece of equipment we have. They even perform swab tests to assure that the cleaning and sanitation is exceeding industry standards. Many hours each day go into ensuring that the cheese we are shipping out to you is being made in the cleanest possible conditions. It is awesome to see the pride that they put into making the cheese and equally awesome to see the pride that they put into the overall cleanliness of the plant. They put a lot of pride into everything they do! We really can’t thank them enough!

For just about as long as I can remember, Easter meant that we were in Italy. Last year this pandemic kept us from celebrating there and we whipped up this wonderful frittata to cheer us all up a bit. Inspired by our favorite restaurants in Tropea, Italy (home to the world's most delicious onion), this is the perfect Easter treat. Pick up your fresh ricotta this week and let this frittata transport your family to Italy next Sunday too! Ingredients: - 8 eggs, cracked and be...aten - Salt and black pepper - Parmigiano Reggiano cheese - 1 Basket of Caputo Brothers Creamery Fresh Ricotta - 3 large Tropean onions, sliced OR substitute 2 large Vidalia or Red Onion, or a combination of those two - 2 T sugar (optional, depending on sweetness of onions) - Extra Virgin Olive Oil - Chopped parsley (optional) Preparation: - Add salt and pepper and Parmigiano to the beaten eggs and beat in a bowl. Set aside. Preheat oven to 350. - In a 9 cast iron skillet, or similar, set on heat, add olive oil. Wait 1 minute. - Add sliced onions and sauté until softened - Add optional sugar if onions are not sweet. Cook 1 minute while stirring. - Pour egg mixture into hot skillet and constantly stir, also adding optional parsley at this time, breaking up the egg clumps as they form. - Once the egg mix begins to get fairly solid place dollops of fresh ricotta around the pan and remove from heat and place in preheated 350 degree oven. Place oven-safe skillet in oven, and bake until there is a tiny bit of jiggle left when you gently shake the skillet. - Remove, slice into 8 pie wedges, and serve. - Buon Appetito!

Don't worry, those dark spots aren't mold, they're hops! Occasionally, as we dry hop the milk for our Perpetual Beer Cheese, a few hops find their way into the milk. Instead of taking them out, we leave them in as "happy little accidents" that continue to contribute notes of floral aroma and bitterness to the cheese as it matures. Ricotta Infornata for the Big Game 1 Basket of Fresh Ricotta 1 Jelly, Chutney, or Honey of your choosing... Background of Ricotta Infornata: Over the past 15 years, Dave and I have had the honor of working with so many different creameries in Italy and each one seems to have their own take on ricotta. The one thing you can always count on is the line of people that arrive each day looking for the freshly recooked (ricotta) whey! As the customers leave with their fresh, warm, basket of ricotta a quick survey of the parking lot and you will notice that no one is in a hurry to leave. A closer look and you will see many of the drivers, spoon in hand, scooping out the pillowy ricotta and eating it straight from the basket, eyes closed to savor the delicious treat! Because the current situation won’t allow for this from our own creamery, we thought we would share one our other favorite warm ricotta recipes. Ricotta Infornata (from the oven) or Tricotta (three times cooked) as it is sometimes called is a perfect treat for the Big Game or anytime you need to bring a fun dish for sharing. It is also a great dish for the vegetarian in your life or something different for those of you following the high protein diets. Typically done in collaboration with the local pizzerias, Ricotta Infornata is a way for Italian cheesemakers to repurpose their day old fresh ricotta. Though in Italy they fire the ovens up has hot as possible to get a dark char on the ricotta, we find that most of our American friends prefer a golden crust. Process Instructions: 1. Preheat oven to the hottest baking temperature possible with your oven (typically between 500-550F for home ovens). Convection should be used if available. 2. Flip a basket of Caputo Brothers Creamery fresh ricotta out onto a baking sheet. 3. Bake in oven for 30-45 minutes until golden brown, turning halfway through cooking for even coverage. 4. Remove from baking sheet and place on serving dish. 5. Cover with topping of choice. We love to use a savory chutney, spicy honey, or of course, my Mom’s famous pepper jelly.
