And this is why we work so so hard at Charlie Gray's Rib Crib to keep the place clean. Anytime you have a food establishment you will have rodents - roaches and mice - and you have to work to keep them down. I have an ongoing contract with an exterminator for that very reason. We keep surfaces clean and sanitized, floors mopped and stuff wiped down so we can stay off this list. It ain't easy and it's a lot to keep up with on top of everything else but it's necessary when you... own a food establishment. I look at this list every time it comes out to see what things we could possibly get dinged on. I see two things that I definitely need to fix (they have nothing to do with sanitation) but I've got to get on it. Owning a restaurant is more than a notion, it's a lot of moving parts and it's a hell of a lot of work. But in the end, it's the legacy my parents left me and I'm doing my best to keep the place open, clean and vermin free. So far, so good. See more

Dear Customers, Today people had to wait a really long time to get their orders and for that I am truly sorry. Here's what happened - when we went to start cooking this morning we found that the ribs were spoiled. So I took them back and got fresh meat. They had to be washed and cleaned which made us late. We usually open at 11 today we opened at 2:30. It was super crowded and we were couldn't keep up and that caused a wait. While I HATE that my customers had to wait today, ...but I was not going to sell less than fresh ribs. That is absolutely unacceptable and I will not do it. So I am sorry about the wait today but it couldn't be avoided. As you know, we try to get people in and out and my regular customers will tell you that we usually DO NOT have a long wait for ribs. I am grateful to the people who sat so patiently (some for over an hour) to get their ribs. Thank you so much. This won't happen again. I am truly sorry. Thank you, Kim Gray

Happy Father's Day from Charlie Gray's Rib Crib! Everybody called him "Mr. Gray" but I called him daddy. He was a wonderful father and an overall good man. I could haven't have asked for more or better in a father. Happy Father's Day, Daddy. You are missed.

We are at it again! Catering for Germantown United's Taste of Germantown 2016. We are out of wings and the ribs are almost gone.
