Chicken Zucchini Poppers are a must try! This is a great substitute for beef and can be used in many ways. Eat them with hot sauce, on a salad, or by themselves.... The kids will love them and not even know that there are veggies inside. If you make these for a party, we're sure they'll be a huge hit! Here's how you do it. Take 1 lb. of ground chicken breast (we use a food processor). Grate 2 cups of zucchini Dice 2-3 green onions Mince 3-4 tbsp of cilantro Mince 1 garlic clove 1 tsp of salt and 1/2 a tsp of pepper Mix all the ingredients together and form them into balls. Pre-heat a large pan on the stove top at medium heat. Add 2-4 tsp. of olive oil and pan fry the balls until brown. Tip: To keep the ball shape, use tongues to help form them in the pan by slightly pinching all four sides of the ball. After the balls have browned, remove them from the pan and place them on baking sheet (use olive oil to keep from sticking). Finish baking in the oven at 350 degrees for 15-20 minutes. Remove from the oven, let cool and enjoy. Dip in desired sauce or eat as is. Enjoy!
