My friend Kurt Aaron WNEP did a surprise visit today in the "Top Secret Kitchen"! I can't disclose what our conversation was about, it was TOP SECRET!
Tonight's DINNER DONE RIGHT, PORK PORCUPINE MEATBALLS, SAUERKRAUT, AND PARSLEY BOILED POTATOES. It was inspired by a post from my friend Jon Meyer WNEP. It was his aunt's recipe and a family favorite. So I thought it would be good one to share these gems.
TODAY'S FEATURE SOUP: POTATO LEEK Diced potato, tender leeks, celery, savory garlic simmered in a rich, hearty chicken velouté embellished with sweet heavy cream.

THIS WEEKEND'S FEATURED SOUP SAUSAGE AND LENTIL When you simmer lentils with onion, carrot, celery and garlic in a poultry stock they are so good, however when you add Italian sausage that's a real game changer of an otherwise semi ordinary bowl of lentil soup becomes extraordinary!!! This soup is like having an angel on one shoulder and the devil on the other. It is a nice healthy balance between good (lentils) and bad (sausage) and unfortunately I’m thinking that a little mischief is ok today!!!

TODAY'S FEATURED SOUP: BOOTHBAY HARBOR LOBSTER CHOWDER This chowder is a match made in heaven! This richly creamy chowder is enhanced with bacon, chunks of lobster, plenty of corn, onions, and diced red potatoes. I’ve added brandy and I believe it adds a burst of flavor while the corn gives a crispy freshness. It is also subtly spiced with cayenne and black pepper. This chowder screams the tastes of the last days of summer in a bowl! Stop in and pick-up a quart or two to enjoy while sitting by your campfire!
TODAY'S FEATURED SOUP: SOUTHWEST BARLEY You will find a zesty change of pace in today’s soup. I started with our house-made poultry stock and simmered a variety of vegetables including but not limited to tomatoes, onion, celery and garlic. I then added black beans, pearl barley, and seasonings. It gets its ZIP from the long hot peppers. A great soup to pair with a sandwich or salad.
I got a hands up hurrah from the Kielbasa Mascot from the PLYMOUTH KIELBASA FESTIVAL on Today's Featured Soup. KIELBASA STEW Kielbasa is one of the many treats that was brought to the United States from Poland. It brings warmth and comfort to your bones. I took kielbasa, cabbage and plenty of vegetables and simmered them in our house-made beef stock. It is finished with a dollop of sour cream. I ensure you that it is filling, hearty and delicious!
TODAY'S FEATURED SOUP: CREAMY GOLDEN ONION Hands down this onion soup is one of my all-time favorites! I truly believe this soup is the ROLLS-ROYCE of onion soups and you should not miss it!!! Yellow onion, carrot, garlic, thyme and celery simmered in a rich vegetable stock then thickened with a roux and finished with a touch of cream, OMG it is ridiculously GOOD.
TODAY'S FEATURED SOUP: BBQ CHICKEN NOODLE I thought I would put a spin on traditional chicken noodle soup. I started with a rich house-made chicken stock, and simmered white and dark chicken meat, roasted sweet corn, bell peppers, onions, celery, seasonings and herbs. It is finished with egg noodles and a sweet and tangy BBQ sauce. A perfect soup to pair with a sandwich or salad!

THIS WEEKEND'S FEATURED SOUP: LASAGNA SOUP Today’s soup has everything you love about lasagna, all in one bowl! It boasts layers of mini lasagna noodles smothered in a rich marinara sauce infused with beef stock, garlic, onion, Italian, herbs, and seasonings. It is also loaded with ground beef, Parmesan, Ricotta, Mozzarella and Provolone cheese making it filling, hearty and perfect for a maybe rainy day. All that I want to say is Drool Baby Drool!
TODAY'S FEATURED SOUP SHRIMP BISQUE This soup is special! When you taste it, you will realize it owes some of its flavor to a made-from-scratch stock that is made using the shrimp shells. Shrimp, vegetables, herbs and seasoning create the flavor which is delicate and the color is beautiful and it is thickened the classic-way using white rice. The cocktail sherry adds that unmistakable flair to this already luxurious soup. It’s rich so a bowl goes a long way.
To much on my plate today, I forgot to post today's feature soup. CHICKEN BROCCOLI RABE AND TORTELLINI This soup is very similar to the sausage, kale and tortellini soup I make. I replaced the sausage and kale with chicken and broccoli rabe. In a rich poultry stock, I simmered the chicken, broccoli rabe, onion, celery, garlic, herbs and seasonings. I finished it with Parmesan cheese and cheese tortellini.
