Have you sat at this special table in our Tasting Room? There is a rich history behind it! This table is actually made from a riddling rack, an important process in the production of Champagne wines. Traditionally, the necks of Champagne bottles were placed inside the riddling rack after their initial fermentation process. The 45 degree inclination allowed the dead yeast and sediment to gather at the mouth of the bottle very slowly, having to turn the bottle slightly every da...y for weeks to gather all the sediment at the mouth. Then the bottles were "disgorged," to finally remove the sediment that was collected after all that time! With today's technology, sparkling wines can be "riddled" within an hour as compared to a month, but we feel honored to have a special piece of wine history in our tasting room! Next time you're in the tasting room, ask Bob and John how they came to get that table... they have their own personal history with it (involving a Christmas party, a stolen table, and many bottles of wine consumed...)
