Happy Holidays! Need a gift for that person that has everything? How about an Olde Forge meat and cheese basket? Your choice of 3 meats and 2 cheeses for $25. Choose from meats: pancetta, kabonosy, andouille, bacon, kielbasa, Thai sausage, and salmon. Smoked Salmon will have a $3 upcharge. Smoked cheeses: Cooper sharp, mozzarella, swiss, provolone, cheddar. Havarti and pepper jack are also available for a $ 1 upcharge. Message us if you would like to place an order!

It's time to debut 2 new creations! Both have just finished dry curing. The first is our pancetta, spiced with black pepper, juniper berries, garlic, and rosemary. It then sat in our dry curing chamber for 2 weeks to give it that aged flavor. $6/half lb The second is kabonosy, the original polish slim jim. It is flavored with black pepper and caraway seeds, smoked for 4 hours, then dry cured for 5 days to slightly dry and develop that nice snap. $3/half lb

We just finished up a batch of our smoked andouille sausage. Our andouille is pork based and packs a ton of flavor from thyme, garlic, and red wine. Andouille has a subtle heat from some cayenne pepper and is perfect for some cold weather jambalaya, gumbo, or red beans and rice! Let us know if you would like to try some!
