Broiling fish at home is a snap and this Broiled Salmon with Parmesan and Olive Oil is the perfect example of just how easy it can be. Add a quick salad or rice and veggies, and you’ve got a healthy, flavorful dinner in under half an hour! Ingredients 6 - 6 oz salmon filets... 1/2 cup extra virgin olive oil (we prefer Laconiko Estate EVOO availble at Olio) 1 cup grated parmesan cheese 2 tbsp chopped garlic 1 tbsp kosher salt 1 tbsp ground black pepper Directions Set your oven to the broil setting at 475F. Brush a baking dish with half of the olive oil. Add the salmon filets to the baking dish and season with the garlic, salt and pepper. Top the filets with the remainder of the olive oil and the parmesan cheese. Set the baking dish under the broiler with the baking rack at the middle position. Cook the filets until they reach your desired level of doneness. I like to cook my salmon to medium, but that is a personal choice. Remove the salmon from the oven and serve while hot! #salmon #recipe
