They are - a reasonably priced alternative to Fillet Mignon. With a scallop or two, you can have a wonderful "surf and turf" dinner for about $10, Economical can still be spectacular. EXCITING NEWS Not too long after we started offering the finest seafood in the area, we added an oak, hot smoked, salmon fillet which is the best commercially smoked salmon we have found. Unfortunately, several years ago our supplier changed vendors. We used their new product for a while, but it wasn’t quite as good as the original smoked salmon we had been getting.... We decided to smoke our own. The results were great so we have been using it since. However, we still have had one problem. Our new Vendor didn’t have the capacity to smoke a whole 3-pound fillet in one piece. That normally isn’t a problem. But at the Holidays, people are asking for the whole smoked fillet for entertaining. I went back to the drawing board and lucked out. I located the original company and I can get the original whole, smoked fillet. The last hurdle is that I need to buy a minimum of 45 pounds (about 15 fillets) at a time to get wholesale pricing. We are a small store and we need and prefer to turn them over quickly so it does not create a cashflow challenge. God knows we don’t need more challenges. The fillets are delivered fresh and they freeze well. The other benefit is, if you take a whole fillet, there is a savings of about $10 off a 3# fillet. If you can’t use a full filet, why not go together with a friend or relative to buy a whole fillet and divided it up.
