Now that we’ve got all our work done for the day, Merry Christmas from us to you! Thank you to all of our customers, chefs and fans. 2020 has been a rough year for all of us, especially those in the local restaurant industry. Hang in there, we’re all in this together. Happy Holidays from Drew, Jessie, Ivy, Rose, Ted, Dixie, all of the cats in our house and in the barns, the freeloading chickens that haven’t laid an egg in 3 months, the 2 turkey toms that won’t stay off the r...oad, the rams who won’t stop headbutting each other in the barn, the ewes getting ready to lamb, the cows who insist on taking their calves outside even though the snow is taller than them, the heifers that wake me up when they start yelling for breakfast at 5am, and the pigs that like to dismantle my barn one piece of concrete at a time. Farming isn’t an easy life, but it’s the one we chose. Stay warm, your friends at Ross Farms.

Here’s that pork we were talking about! As of this post it’s all fresh, but it will be frozen overnight. Including a new product, chorizo! All of the pork that came back this week is from one of our purebred Large Black Hogs.... Look at the marbling on those chops! Doing some holiday baking? It isn’t a real pie crust without lard. We’ve also got some beef roasts and stew meat, a few burger patties, as well as some sweet Italian lamb sausage, and a wee bit of Merguez left. We’re here for the rest of the day, just message us to order!

Today, we made new friends! Let us introduce Fet Fisk Royal Market, say Välkommen everyone! A swank little spot specalitizing in Scandinavia inspired cuisine and utilizing local ingredients! ... They’re the proud new owners of half of a heritage hog (with the head on, for all that head cheesy goodness) and a sack of Har-Lo Farms potatoes! Next week their order includes some Milking Devon strip loins for what I can only imagine is the worlds best roast beef. Chef Nik is an awesome guy with a passion for his Scandinavian heritage and stoked on local ingredients! (He also said he might make me some haggis, which I’m more than excited about!) Okay folks, if you want to get into Milking Devons, have I got the opportunity for you. We have 6 heifers to move. 4 from the herd consignment we got from Tenne...ssee(3 registered and 1 grade) they’re all 2 year olds or better. If you’re local and I know you, I’ll let you use my bull when they’re of age or Colonial Williamsburg has one for sale I’ll go get. We also have 2 weanling registered heifers of our own breeding. To get the FAQ out of the way, the we’ve got too much of the genetics from the Tennessee herd, it doesn’t make conservation sense to keep that many with the same lines. Hope everyone is staying safe and warm!!! We have some tasty pork coming back from the butcher tomorrow so we will be stocked with that as well as having select items in the lamb and beef department. For beef, we mostly have roasts and stew meat, but we do have a few packages of ground and premade burger patties. ... When I made my delivery to @fet_fisk yesterday, Nik asked me if I wanted some sausage to take home. Of course I didn’t turn it down. This is a tradition Rusk sausage (that’s also available right now on their website ). It was amazing. Flavorful, fresh, all around wonderful. He also gave me a sausage still in the r&d stage, but I’ll make you wait for that one. Try his stuff!

We will be selling our products directly from the farm. ... With the heightened COVID risks we are seeing right now, we STRONGLY encourage you to order ahead. When you arrive, we will place the order in your car for you, and take your payment if it’s not prepaid. This will minimize everyone’s contact with anyone else, ensure you get what you’re looking for (since supply is limited), and also ensure our livestock operations stay biosecure. Now, what can you order? Good question. As of this post, we have the following in stock. Because of processor backlogs, we have a limited variety of cuts, and a limited quantity of said cuts.... but, we will do our absolute best to get you what you need. Friends, while I was in the hospital our fences apparently became a challenge to our livestock. I’m working on fixing them, but if you see the livestock in the ...yard, don’t attempt to herd them. You’re a stranger to them and it only freaks them out. When I go up to them and yell at them for being stupid, they run to their gate and wait because they know they’ve done wrong. Just a PSA, you can text me and tell me where they are if you see them, I unfortunately can’t be everywhere at once. Folks, your wait is over! Thanks to our butchers working extra hard this week, the beef has come in early! Drew just got back to the farm with a whole steers worth of beef and two wethers worth of lamb! Check out these porterhouses! A pack of 2 weighs 2.52lbs, making these steaks more than 18oz each! How’s that for a heritage breed?! This weeks steer was a Lineback finished for us by our great friends at Har-Lo Farms! This weeks lambs were a hog island and a Shetland bred an...d finished by us at Ross Farms! This beef, the lamb, and the pork already in stock are available for pick up at the farm this weekend, but you must preorder! If you miss this weekend, whatever doesn’t sell will be with us at the Washington Farmers Market on Thursday! Three questions I would like to answer today... Why should you choose local? Why should you choose heritage lamb breeds? Why should you choose to buy from us? Why should you choose local? Buying local helps the local economy, since 68% of the total money spent at a local business returns to the local economy. 9.3 billion dollars would be returned our economy if every US family spent $10/month at a local business. ... Why should you choose heritage breeds? Heritage breeds (we have Shetland, Leicester, hog island, gulf coast native, Florida cracker, Cheviot, Jacob) deserve just as much respect as the commercial breeds if not more. Commercial breeds (suffolk, hampshire, shropshire, etc.) are bred to pack on 1 lb of weight a day. They are fed a high fat diet in order to help them gain the desired amount of weight to finish in as little time as possible. Whereas heritage breeds are slower to mature due to not being bred up meaning they have more time to acquire a more broad and deep flavor. What qualifies lamb as lamb is anything under the 18 month mark of age. Having a longer mature time gives them more time to acquire flavor all the while living a great life until they *meat* their maker. With the shortened amount of time it takes for commercial breeds of lamb to mature, they have a higher chance of being fatty/greasy and gamey. Our lamb is far from that! Our lamb is raised on pasture their whole life, and the native grasses of our little piece of Appalachia give the lamb a similar terroir to the animals raised in the French countryside. Then for the last month, they get finished on high protein finished distillers grain from Red Pump Spirits while still on pasture. The high protein grains provide a nice finish to the marbling and provide a sustainable way to both dispose of the waste from the mashing process and to nutritious feed for our sheep. Thus it’s easy to tell the difference between our heritage breed lamb compared to commercial breed lamb. Why should you buy from us? Buying from us would give you the best of both worlds! High quality lamb while feeding into the local market and supporting a more than century old farm currently run by young farmers who are the 6th generation to work the land. The farm was initially a sheep farm and when Drew and Jessie took it on, they added hogs and cattle to the equation. If you have any doubts about our superior product message us and treat yourself to what true meat should taste like. Pictured are just a few of our heritage breed sheep!

Today I did something I never thought I’d have to do... remind drivers this is a working farm and that they *need* to slow down. I put out 3 of these signs today. 1 on either side of the farm on 519 and 1 next to the pasture along Roberts Road. The one in the picture is 100 yards after a tractor crossing road sign that apparently wasn’t enough to remind drivers to be aware and conscientious. The entire time I put these signs out, I had people whizzing past me going well over... the 45 mph limit. And frankly, I’m pissed. The amount of times we’ve had close calls with getting hit or even animals getting hit is absurd. I’ve watched a driver go around a different one right in front of our house because they apparently weren’t going fast enough. I’ve called the state police, whom live right next to us!, and do you know what the woman who answered the phone said? You’d figure with the state police being right here, they wouldn’t be driving like that. But boy is she wrong. I’ve been behind people who slow down long enough to pass the barracks and speed back up. Roberts road is no better. People speed to a stop at the end of that hill. I watched my cat almost get smeared by someone who didn’t even slow down or swerve. I’ve watched people not even stop at the end of the road. To top it off, we’ve had a cow hit on that road one late night while Drew was standing next to it flagging the guy to slow down. I was unknowingly standing in the middle of the road farther down and he barely missed me. Moral of the story... share the road. Be aware of your surroundings. And for the love of god, stop going around tractors within the farms area (we almost died one day while trying to turn into the farm by someone who flew up on us from around the corner). Also, if you or someone you know is interested in one of these signs, contact your local farm bureau!

We’ve also got our veggie bagel back with fresh ba...sil cream cheese, fresh tomato, crispy local cucumber and @growov microgreens. Add an egg and it’s divine.
