Give thanks to your leftovers with this easy Loaded Turkey Meatballs recipe! Ingredients 1 lb ground turkey 1 carrot, peeled and grated... 1 zucchini, grated 1 small brown onion, finely diced 2 tsp minced garlic 1 egg, lightly whisked 1 tbs coconut aminos* 2 tsp dried parsley 2 tbs almond meal pinch salt & pepper 4 tbs olive oil Directions Sauté onion with 1 tablespoon of olive oil in fry pan for 5-6 minutes until it softens. Add garlic and sauté for further 2 minutes. Set aside to cool. In large mixing bowl add ground turkey, grated carrot and zucchini, egg, coconut aminos, dried parsley, almond meal, salt, pepper and cooled onion mixture and mix well until thoroughly combined. Divide mixture into 9 meatballs. Reheat fry pan and add 3 tablespoons of olive oil. Cook meatballs turning every 3-4 minutes until cooked through.
