Last year the participants loved having this accountability so much that we decided to make this challenge an annual thing. Halloween, Thanksgiving, Christmas, Hanukkah, and New Years are all big food holidays, yet every person lost weight! You do not have to be our client to participate. Message us to sign up!

The easiest summer meal! Sautéed one onion, add in mushrooms and gazebo room dressing. Add in a few cashews. Use a vegetable peeler to slice zucchini noodles and sautéed for only a minute so they don’t gets soggy.

Back from vacation = back to reality, but I didn’t feel like cooking yet. So we grabbed these enchiladas from Costco to try. Definitely recommend them!
I know it looks like a plate of mush- but these stuffed chicken breasts were so good. Four chicken breasts 1.5 onions 1 package portobello mushrooms... 1/2 bag frozen Spinach Fresh basil 1 block cream cheese Salt, pepper, Italian seasoning, garlic Cherry tomatoes Parmesan & mozzarella roast tomatoes & 1/2 onion tossed in avocado oil, salt and pepper until tomatoes start to blister. caramelize onions, then add mushrooms sauté until soft, add frozen spinach and seasoning. cook veggies down until most of the liquid evaporates then add cream cheese, continue to stir until melted. Fill chicken with a spoonful of mix. Season chicken and lightly sprinkle shredded mozzarella and parmesan cheese on top. Bake in air fryer on sheet pan at 375 for 20 mins. For the sauce: add most of the roasted tomatoes to the remaining filling. Stir often. Top with remaining roasted tomatoes & onions and fresh basil.
The remodel is almost complete! Just waiting on some art work, organization stuff, and new equipment! I’m glad when I throw crazy ideas out there to Chris, he just goes with it and let’s me start ripping down walls. The cardio room & storage closet were so much wasted space. We wanted our clients to feel comfortable when we both had clients at the same time, so this was the perfect solution to allow us to spread out more.
Alright all the votes have been tallied to our transformation contest!! This was such a close competition we ended up using extra judges to determine our second place winner! Out of a possible 24 points our first place winner got 23 points! Congratulations Autumn! We are so proud of your transformation!! Our second place winner is, Jason! You did an amazing job!!! ... Registration is open to sign up for either a 5k or 10k. Everyone is welcome to join our team, just type in Adaptive Fitness for the team name. Although this is a virtual run this year, depending what circumstances are like in April we will evaluate getting together with our team to do this run/walk together. Meal prep for the win. Steak and roasted vegetable fajitas. Roasted: tons of mushrooms red and white onions... yellow, orange, and red bell peppers We either eat them as a fajita bowl or use one of these low carb tortillas from aldi. Topped with roasted tomatoes and green onion, so fresh tasting with tons of flavor. . The rest of the week we will use the left over roasted veggies in omelettes. . Link to the marinade below. We couldn’t be more proud of all the people who participated in this challenge. The twelve weeks ran over Halloween, Thanksgiving, Hanukkah, Christmas, and New Years. No one gained weight! We will definitely do this challenge again next year to help hold everyone accountable! Cheers to starting the year off on a great note!
