Downingtown flooded but Artisan Homebrew is untouched! The shop is a few feet above street level as you know if you’ve shopped here. However, there is no electricity and the restoration time may be later in the day. So, I can’t run any transactions or mill things. I’ll announce when the power is back on and we are open for business. Thanks for your patience.

Happy to announce that we got our hands on this dry yeast strain. Philly Sour was created in the labs of the University of the Sciences in Philadelphia. It's commercially produced by Lallemand. Produces a sour beer in 10 days without having to kettle sour or wait a year for it to reach its peak sourness. Too good to be true? Not from what I'm hearing. Talked to few people and they are very excited about this yeast. Official description below: Philly Sour produces modera...te amounts of lactic acid in addition to ethanol in one simple fermentation step. This first yeast in the WildBrew series is a great choice for innovative, sessionable sour beers with refreshing acidity and notes of stone fruit. With high attenuation, high flocculation and good head retention, WildBrew Philly Sour is an ideal yeast for traditional styles such as Berliner Weiss, Gose, American Lambic Style, American Wild Ales and its resistance to hops make it perfect for Sour IPA’s. In Lallemand’s Standard Conditions Wort at 20C (68F) WildBrew Philly Sour yeast exhibits: *Fermentation that can be completed in 10 days. *High attenuation and High flocculation. *Aroma and flavor is sour, red apple and stone fruit, notably peach. *The optimal temperature range for WildBrew Philly Sour yeast when producing traditional styles is 20C(68F) to 25C(77F). *In the Lallemand standard conditions wort, typical pH of 3.2-3.5 and titratable acidity of 0.1-0.4% lactic acid are achieved. Higher lactic acid levels will be achieved in worts that are higher in glucose.

Too hot? These Kveik strains say "Bring the heat!" There's a new Kveik strain called POG A37 in stock. The description is as follows; TEMP: 85100F (2938C) FLOCCULATION: HIGH ATTENUATION: 7585% ALCOHOL TOLERANCE: 10% Single isolate kveik known to produce huge tropical ester profile... After years of surviving in cold climates, this Kviek yeast is ready for the tropical lifestyle. When used at high temperatures, POG produces an extreme amount of topical fruit aromas including pineapple and guava. At the lower end of the range, more delicate citrus, peach and kiwi aromas are noticeable. The beer style options are expansive for this yeast. Use it in a hazy/juicy IPA to compliment the hops or use it in a sour fruited beer to maximize the extreme aromatics. POG likes to work fast at high fermentation temperatures. It is also strongly flocculent, which makes it great for a fast turnaround.

Two new yeasts on the block from Imperial. Julius: Bright citrus notes of orange and lemon along with light apricot-like esters come through with low to moderate hopping rates to make a perfectly balanced beer. The high flocculation characteristics of this strain make it easy to work with and produce bright, crisp ales. Excellent choice for a house ale strain but also a great yeast for a hazy IPAs. TEMP: 6468F (1820C) FLOCCULATION: HIGH ATTENUATION: 7278% ALCOHOL TOLERAN...CE: 10% Que Bueno: Que Bueno creates refreshing light to dark lagers with very clean, low ester aromatic profiles and nice crisp and dry finishes. This strain is not just a great choice for Mexican lagers, but any lager where clean ester profile and dry finish is appropriate. TEMP: 4755F (813C) FLOCCULATION: MEDIUM ATTENUATION: 7377% ALCOHOL TOLERANCE: 8%

Brewing a batch of what I would call comfort beer. Anyone want to hazard a guess as to what that might be? This isn’t much of a test.

Artisan Homebrew 07.08.2020

Hello creative producers of things fermented. I’m personally enjoying a dry stout I made a bit ago at home. The world may pause but we can keep rolling. Pat yourselves in the back. Yeast will never turn down a bite of sugar. We keep those critters happy, they always return the favor.

With great difficulty, we have decided to not open Artisan Homebrew tomorrow(Sunday 3/15). The Governor and state government has put a lock down on Chester County asking that non essential businesses close for now. Yes, I too agree that homebrewing is essential in our world but I will play by the rules in an effort to help squash this thing sooner so we all can get back to awesome pre-corona days we took for granted. I will be evaluating the landscape of this situation daily to see when or how we can get the ingredients into your possession with minimal risk. Stay tuned here.

Made a 3 gallon batch of Russian Imperial Stout to pitch onto a dry stout yeast cake. Next, soaking a medium plus toasted oak spiral in bourbon to eventually join the beer in secondary for a long winter’s nap. Patience.
