Customers ask me about my baby meatballs and red sauce all the time. They ask if I cook my gravy/sauce all day? Do I fry the meatballs or oven roast them?...So here ya go, basic red sauce and baby meatballs. Happy Sunday! ~JBL Meatballs Ingredients:... 3 cups day-old bread, cut into 1-inch cubes 1 1/4 pounds ground meat mix (veal, beef & Pork) cup milk 3 eggs, beaten 3/4 cup pecorino, grated (I used parmesan cheese) 1/4 cup finely chopped fresh Italian parsley 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 cup extra-virgin olive oil Cover bread crumbs with milk and soak for 20 minutes. Drain the bread cubes and squeeze out extra moisture. In a large bowl, combine the bread, beef, eggs, cheese, parsley, salt, and pepper and mix by hand just until mixed (do not over-work the meat!). With wet hands, form the mixture into 12 to 15 meatballs. I like to make a small patty and sauté it like a burger to taste and check for seasoning. Variation: sweet some diced onion an garlic and add to meat mixture. In a large, heavy-bottomed skillet, place meatballs and cover a little over half with basic red sauce and cup low sodium chicken. Cook low heat on stove top for approx 45 minutes. Basic Red Sauce Ingredients: 3 TBS butter 1 medium onion, finely chopped 4 TBS, crushed garlic 2 cans crushed tomatoes Salt & Pepper, to Taste Fresh Basil Progression: Heat a large sauté pot over medium heat, add butter and onion and cook until slightly translucent. Add garlic cook until golden brown, about1 minute. Add crushed tomatoes and lower heat to a simmer. Cook for one hour at low heat stirring occasionally. Remove from heat and puree in blender to desired consistency.
