It's time! The FIFTH annual Friendsgiving for No Kid Hungry is live! Thank you all SO MUCH for continuing to support my annual charity event - to date, we have raised around $5,750 from the previous four Friendsgivings and Café Le Püp Live STREAM and every year, the bar has been raised to donate more. That's over 50,000 meals to America kids facing food insecurity! Like everything else in 2020, things are looking different this year. The online fundraiser is still active and... working towards reducing the rate of American children facing food insecurity, which has jumped back to 1 in 4 due to Covid-19 related restrictions and regulations. Instead of the annual Friendsgiving dinner, the timing (and occupancy guidelines) works out this year that our WEDDING will be standing in for the annual gathering. Found some alternative flours in the #pantry and had a go at a #glutenfree #apple #galette. I learned the #coconut #flour absorbs A LOT of water, so up that hydration when making the dough. Once the dough of #almond flour, coconut flour, olive oil, and water came together, I coated the middle with vanilla sugar, #nutmeg, #allspice, and #cinnamon as a barrier between the dough and apples. Added the last of my @westwindorchard apples from our WNY trip tossed in a little more o...f the spice mix. Folded over the ends. Threw it in the oven until it seemed right. The @williamssonoma #silicone mat made baking and plating super easy without excess grease or coatings. For an #impromptu #dessert, it even got a gluten free friend's seal of approval: good but just a little dry (like most gf baked goods). My go-to #easy meal is #stirfry, giving my new @madein #wok a regular workout. Typically, I stick to a classic tamari, rice vinegar, ginger, garlic, and crushed pepper sauce. Today, I decided to play with the idea of #fusion: one type of execution with a different #flavor profile. It's fun to expect a food to taste one way and end up being a complete different experience. #DontJudgeAMealByItsPlating The wok was super hot with a drop of grape seed oil, got the scallions good ...and charred, and tossed in the thinly sliced pork. But this time, I finished it with a sauce of Worcestershire, liquid smoke, apple cider vinegar, garlic, cumin, smoked paprika, and crushed pepper. #Steakhouse meets stir fry! When life hands you purple #potatoes... make #gnocchi! Inspired by ordering @marcvetri's #MasteringPasta and preordering #MasteringBread, I used my last Okinawan sweet potato from @riverwardsproduce to make gnocchi. Frozen, boiled, and chilled (ala chef Vetri) and then #sauteed in a bubbly bath of browned #butter, #rosemary, #parsley, and #sausage #grease. Our new @madein #carbonsteel pan we got as a #wedding gift perfectly gave just the right amount of browning to the gnocch...i. This dish absolutely screamed #fall even though temp is climbing back up! #latergram from a couple weeks back. Due to #Covid restrictions, my #groomsman wasn't able to make my #bachelor party. In it's place, he decided to drive 6 hours from NC to spend 24 hours with me at home. We decided the most appropriate at home activities included making craft #cocktails with respective #local #gin - his being @conniptiongin and mine being @bluecoatgin - while #roasting a whole #duck. Dry brined in salt and only salt, then in a screaming hit oven, breast dow...n, until it told us it was ready. We then deglazed the pan with some white wine and thyme to make a very simple jus. Along with the duck, I placed #heirloom #carrots on a bed of parsley, rosemary, thyme, and #carrot frawn in a #castiron pan. After it was covered on the stove to smoke, it went in the oven for 30 minutes. Deglazed THAT pan with honey and orange. The morning after, we picked off the rest of the duck meat to create an amazing #hash with Okinawan sweet potatoes from @riverwardsproduce, piquillo peppers, shallots, and fried eggs. The rest of the carcass was used to make a duck demi glace for another post. I'm #blessed to have amazing people in my life that travel from far just to spend a few quality moments together. We affirm that all kids are amazing and can do great things when given the right care and resources. Here's a group of kids destined to do great things because it is abundantly clear how much love their moms have for them! Please share these moms' message of hope - the video is sure to make you smile... and someone in the Café Le Püp kitchen must have been cutting onions during it, too... Pay special attention to the incredibly dapper Maddox (my cousin). Looking good in yellow runs in the family :)
