#palaktofu minus the tofu, plus #blackeyedpeas and #kale. So delicious, even #toddlerapprovedfood I used the base for palak tofu, per the recipe on our website (link in bio), added a handful of kale (all I had), 1/2can coconut milk, and 1c of cooked black eyed peas that I had leftover from a batch I cooked earlier this week. #dinnerinspo! This coconut milk soup is both light and hearty, and full of #warmingspices which is perfect for winter. We made it with #kalachana (brown chickpeas) but it would taste great with #rajma (kidney beans), #chana (regular chickpeas), or #masoordal. You can also use whatever veggies you have leftover -heat 1 tbsp of avocado oil to medium -add 1 Ceylon cinnamon stick, and 2 cloves -sauté for a few seconds until fragrant, then a...dd a few curry leaves -sauté for a few seconds, then add 1/4tsp grated ginger -add about 2cups chopped veggies (we used carrots, cauliflower, a small potato) and a little bit of water, a pinch of salt -cook veggies until soft -add 1 can of coconut milk -add cooked beans/lentils -let simmer for a few minutes -taste and adjust seasonings as desired See more
