Foolish Waffles 11.11.2020

Third course: Bò Khô | Vietnamese Beef Stew -Slow braised beef, seasonal root vegetables, fresh Vietnamese herbs, chili peppers, homemade garlic chips, lime, toasted & buttered baguette from Ba Le Bakery This is probably one of the first dishes that I learned how to make from my mom. It's rich, hearty, a hint of sweet to balance the spices, herbaceous, & 100% what I want to eat when I need comfort. It can be eaten with rice, noodles, or with a flakey baguette for dip dip... action. If you've ever been to one of my @cook classes, this was most likely on the menu. When I would visit my family when I was younger, I used to chomp Thai chili peppers off the plants of my grandma's garden, ball my eyes out, but then go back for more. I was a persistent and stubborn child and I would say it still holds true today when it comes to my beliefs + values. My grandparents or my mom would make me wake up at 4 am to go eat ph or bò khô for breakfast before heading to my 4 pm flight back to school. I didn't understand it before, but I get it now. Food is the universal language of love. When it's hard to express our feelings or convey our thoughts into words, pushing comfort food is just another way of saying, "I love you". Food and how we eat is a huge part of our culture + identity. I always think about these moments when I harvest chili peppers from my garden to make bò khô. It reminds me to slow down, break some bread with loved ones, & appreciate the bounty mother Earth has gifted us. Despite 2020 being a complete rollercoaster of emotions, I, @sandykimteee, learned a lot about myself and feel very fortunate to have supportive family, friends, & peers who constantly inspire me to make an impact, big or small. When Thu Pham of @capheroasters told me about @triplebottombrewing Supper Club, I could not pass the opportunity to work with a team I admire and continues to strive for social + racial justice. The supper club highlights diverse chefs while giving lo...cal non profits a platform to share their mission over a hearty meal. With the help of the community, Youth Sentencing + Reentry Project helps children before, during, and after incarceration by providing support, health + mental care, education workshops, reentry plans, tools for self advocacy, and more! A member of @ysrp, will be joining us as our guests and will speak more on their mission to keep children out of adult jails & prisons in the Philadelphia area. $5 of each ticket sale will be donated to YSRP and there will be an opportunity to donate more to their cause at the event. Second course: Scallop Gi Vietnamese Scallop Salad -Fresh, thinly sliced local Samuels Seafood scallops, pickled lotus rootlet salad, prawn crackers, fresh Vietnamese herbs, & nc chm crushed peanuts Summer has been the season of fresh local scallops for me. They are so sweet and delicious, that sometimes less is more when showcasing something so delectable. The special cocktail created by @nowletsgetgoing to pair with this dish will take you away on a mini mental ...tropical vacation and I think we could all use a few glasses of that Lotus root comes from the beautiful lotus plant, which can be found in wetlands throughout Asia. This aggressive grower is a complete plant in which every part of it is edible. So to help maintain it, we preserve it and eat it! The taste reminds me of celery, where it is fairly subtle and the crunchy texture is really where the party's at. Plus, it's a great source of fiber! Prawn crackers are my all time favorite childhood snack. It's one of those snacks that are always right at the Asian Market check-out register and waiting for me to consume the airy goodness out of it. They are light, crunchy, slightly sweet & salty. They make a great base for you to build the perfect bite. Frying the chips and watching them puff is also visually stimulating and never gets old to me. What's nc chm? It's the mother sauce of Vietnam and if you've ever peaked inside the fridge of Vietnamese household, you'll usually see it stored in a giant Tropicana bottle. It is made with fish sauce, chilis, garlic, lime, & rock sugar. It perfectly encapsulates the key elements of Vietnamese cuisine: salty, spicy, bitter, sour, & sweet. Balance is key! A portion will be donated to Youth Sentencing & Reentry Project. First course:... Cà Ri Bánh Giò | Rice pyramid dumpling steamed in banana leaves, filled with curried minced pork & wood ear mushrooms Bánh giò is a savory rice dumpling steamed in banana leaves and typically filled with minced pork & wood ear mushroom. This modest snack is the perfect portable street food that is usually sold as a breakfast item in Northern Vietnam. The banana leaves are inedible but it gives the inner rice flour layer a subtle sweet aroma and can act as a plate after you unwrap it. This dish always makes me feel like I'm unwrapping a present Wood ear mushrooms are also known as jelly mushrooms because of it's shape and jelly like texture. It is grown throughout temperate regions world wide and has many medicinal properties. It gives the dish a crunchy texture to balance out the softness of the rice dumpling. In harmony with TBB's mission in providing opportunities & growth, we will be mentoring the kitchen crew throughout the course of the event on the balance of Vietnamese flavors + our experiences in the industry. Due to covid19, we reqire everyone to wear... a mask when being served to protect everyone. We are taking the utmost precautionary measures to ensure the safety of our guests + team. There will be 2 time slots for outdoor dining. After 5 months of quarantine, I emerge with a new attitude and mindset of how I want to continue feeding people. I'm PHIN-ALLY coming out of my shrimp shelI and I'm proud to announce that we've teamed up for @tr...iplebottombrewing's next Supper Club dinner! Triple Bottom Brewing is an impact brewery that goes the extra mile to create a more sustainable environment and a sense of community. The supper club is an outdoor dining experience that highlights chefs, mostly BIPOC womxn, while working with a non profit. Seeing little to no representation of myself growing up in school and in Philly’s food industry, it took a long time for me to reclaim my identity. Now, I choose joy and to live unapologetically as a Vietnamese American. Cooking and growing food passed down from my mother's garden brought me closer to my culture and my community. It was intrinsic for Thu and I to celebrate our shared heritage and acceptance of change with a Vietnamese modern menu. On 9/3, we are serving up 4 courses packed with all the Vietnamese flavors *think sweet, salty, sour, spicy, + bitter* paired with a beer + refreshing cocktail. An estimated 86% of all federal prison inmates were arrested over a non-violent victimless crime! The NYPD alone has over 600 narcotics officers vs only 22 officers dedicated to investigating sex crimes. If the U.S. government would free just HALF of all non-violent drug-related offenders it would save the taxpayers an estimated $17 BILLION dollars per year, if they ended the Drug War altogether by abolishing the unconsitutional controlled substances act, it would save the tax payers $55 BILLION dollars per year (or more)." Let's get personal! I went to a boarding school that was dedicated to underprivileged children for 12 years. I didn't know what I wanted to do with my life and my career counselors did not listen to me. So my first year of college, I went undecided (still paying that off, LOL) because it was either that and live on campus, or go back to being homeless. I am thankful for the few adult figures in my life that opened their home to me, help me get a job, and guide me to pursue my... passion in culinary arts (big shout-out @culinaryclasscollective, love you ). So, I resonate deeply with @12plus and Càphê Roasters mission in helping students jumpstart their career after highschool. They are finalists at Philanthropitch.
