Island Time

This weekend Cuba is our theme, but we wanted to drill down into our menu and give some more detail about some Cuban influences and what makes them special (the food is also $2 off all weekend to celebrate ): Cuban Sandwich (pictured in photo): How we make it special, is that we smoke the pork butt no less than 12 hours, then hand pull it. To finish the sandwich we sizzle it on the flattop with sliced ham, provolone and swiss, then put a dab of mayo and top it off with our m...ade from scratch pickles! Awesome sub and one of our top 3 items! Cuban Hangar: This dinner only entree starts with a 12 oz hangar steak, one of the most tender cuts with little fat. We then fire grill it to temp, and cover it with our Cuban mojo sauce (pureed cilantro, garlic, and lime juice). A perfect combination that really accentuates each flavor set! Cuba Libre: "Spanish for Free Cuba" this started to proliferate during the Spanish-American War around 1898, becoming the slogan of the Cuban independence movement!

This weekend, we showcase the southernmost island in the Caribbean chain, named Trinidad! It being so close to South America, it's culture and cuisine blossomed long before Spanish and British settlers had a chance to add their flavors. We decided to go the more native route this week, and we are proud to present our entree of the weekend:... Trinidadian Fried Shark Sandwich! Marinated, dredged and fried shark, with pineapple, tomatoes, cabbage, cucumbers and your choice of mango habanero or Avocado cream. Our prep method leaves the meat flakey and moist!
