The process of growing apples is year-round. During the winter months, after apple harvest has been completed, farmers re-direct their focus to next year's fruit. This begins with tree pruning. Pruning is done to maintain a tree form and to stimulate growth. Newer orchards, like the one pictured, are supported by stake or trellis systems, so the trees are pruned to grow up, as opposed to out. These orchards are pruned delicately, telling the tree to generate new fruiting wood. Who says apples only belong in pie?! We are loving this twist on a traditional stuffing. Apple and Sausage Stuffing Ingredients:... 10 cups bread crumbs 1 lb. loose sausage mild 6 TBSP unsalted butter 2 cloves garlic, crushed 1 large yellow onion, chopped 1 cups celery, chopped 2-3 fresh apples, cored and diced with skin on* 2 TBSP fresh sage, chopped fine 1 TBSP fresh thyme, chopped fine 2 - 3 cups chicken broth/stock cup apple cider You can mix any type of tart apple you would like, as long as it is a firm apple that will keep its shape. We recommend Granny Smith, Pink Lady, Crimson Crisp, Rome or Gold Rush. Let’s make it! Preheat oven to 350F. Lightly spray a 13x9 pan. 1.) Spread the chopped bread crumbs on a baking sheet and bake for 12-14 minutes, or until golden brown; set aside. 2.) Heat a medium sized skillet and brown the sausage. Drain and set the sausage aside. 3.) In the same pan, melt the butter. Add the chopped garlic, onion and celery. Sautee until fragrant, about 3-4 minutes. Add the apples, sage and thyme. Cook for about 1-2 minutes then remove from heat. 4.) In a large bowl, combine the bread, sausage, apple mixture and parsley. Season generously with salt and pepper. Stir in chicken stock and cider until absorbed and well combined. Add the chicken broth gradually. You may not need all of it.
