Buffalo Chicken Stuffed Zucchini Boats Ingredients... 8 oz. raw boneless skinless chicken breast Dash each salt and black pepper 2 large zucchini (about 12 oz. each) 2 tbsp. fat-free plain Greek yogurt 1 tbsp. light/reduced-fat cream cheese 1 tbsp. Frank’s Red Hot Original Cayenne Pepper Sauce 2 tbsp. chopped scallions 2 tbsp. finely crumbled blue cheese cup shredded carrots, finely chopped Preheat oven to 375 degrees. Lay a large piece of heavy-duty foil on a baking sheet, and spray with nonstick spray. Place chicken on the center of the foil, and sprinkle with salt and pepper. Cover with another large piece of foil. Fold together and seal all four edges of the foil pieces, forming a well-sealed packet. Bake for 25 minutes, or until chicken is cooked through.Meanwhile, prepare zucchini. Slice off and discard stem ends of zucchini. Pierce zucchini several times with a fork. Place on a microwave-safe plate, and microwave for 3 minutes. Flip zucchini and microwave for 3 more minutes, or until softened. Pat dry. Let cool, about 5 minutes. In a small bowl, combine yogurt, cream cheese, and hot sauce. Mix until uniform. Cut zucchini in half lengthwise. Gently scoop out and discard the inside flesh, leaving about -inch inside the skin. Thoroughly pat dry. Remove baking sheet from oven. Set temperature to broil. Cut packet to release hot steam before opening entirely. Transfer chicken to a medium bowl. Shred using two forks. Add hot sauce mixture and scallions, and mix well. Place hollow zucchini halves on the baking sheet. Fill with chicken mixture, and top with blue cheese. Warm up this weekend with a delicious low-carb Chicken & Kale Soup! Ingredients 2 Tbsp avocado oil ... 4 boneless, skinless chicken breasts 12 tsp salt 12 tsp pepper 1 (32-oz) carton organic chicken broth 2 Tbsp white wine vinegar 1 large onion, cut into 1-inch pieces 1 Tbsp minced garlic 1 bay leaf 1 bunch kale, trimmed and cut into 1-inch pieces 14 cup chopped fresh parsley Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken breasts with salt and pepper. Add chicken to skillet; cook 3 minutes per side or until browned. Transfer to a 5- to 7-quart slow cooker. Stir in broth, vinegar, onion, garlic and bay leaf. Cover and cook on LOW 5 hours. Stir in kale and parsley. Cook 1 hour longer. Shred chicken with 2 forks before serving.

Try this spicy buffalo chicken salad Ingredients 2 bone-in, skinless chicken breasts ... 1 cup plus 1 Tbsp olive oil 34 tsp salt, divided 14 tsp pepper 1 large egg 14 cup fresh lemon juice 1 tsp dried dill 1 tsp garlic powder 12 tsp onion powder 12 tsp dry mustard 14 cup hot sauce Preheat oven to 375F. Place chicken in a baking dish; drizzle with 1 Tbsp oil, and sprinkle with 14 tsp each salt and pepper. Bake 28 to 30 minutes or until chicken is done; cool. Shred chicken. Blend egg, 2 Tbsp lemon juice, dill, garlic powder, onion powder, dry mustard, and 12 tsp salt in a blender. With the lid on and blender running, slowly drizzle in 1 cup oil through top opening in lid. Stir in 2 Tbsp lemon juice and hot sauce. Combine chicken and hot sauce mixture; chill until ready to serve. Serve over lettuce or with celery and cucumber. Garnish with fresh chives

Setting long-term goals helps us visualize an accomplishment but setting short-term goals helps keep us on track and encouraged, even when the long-term goal is taking longer to reach than we expected. When setting your goals, write down your main big long-term goal and then several small short-term goals you could reach between now and your big goal. Once you’ve achieved a short-term goal you can focus on the next on...e and the next one and so on, until the life you’ve been visualizing becomes a reality! Here are some examples of the sort of small goals you might start with: "I will eat a healthy breakfast every morning." "Every day I will replace my afternoon sugary treat with a piece of fruit." "I will drink 8 glasses of water every day." "I will go for a 20-minute walk every day." "Every morning I will start a healthy meal in the crockpot or prep what I need to make a healthy dinner." Ingredients 1 lb lean ground pork... 1 egg, beaten 12 cup blueberries 1 tsp dried rubbed sage 1 tsp garlic salt 12 tsp crushed red pepper 1 Tbsp olive oil, divided Combine all ingredients, except oil, in a large bowl until blended. Shape mixture into 8 patties. Cook 4 patties in 12 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until centers are no longer pink, turning after 4 minutes. Repeat once with remaining oil and 4 patties. Drain on paper towels.serve with eggs and sliced avocado!
