Peppermint Patty Loves Chuck is our vegan truffle homage to unrequited love: house made fondant, organic peppermint, 70% dark chocolate, and freckles of nonpareils. Charlie Brown ignored Peppermint Patty’s crush, perhaps our video’s end could melt Chuck’s heart after all, and maybe yours too. Fun Facts: Charles Schulz coined Peppermint Patty’s name upon seeing a plate of York Peppermint Patties in his home. He thought the name was too good to pass up before any other artist thought of the same joke. Peppermint Patty made her debut in the Peanuts in 1966. Looking back, this is the truffle that started it all, Monkey’s Uncle. I took my moms much loved coconut cream filling and turned it into a truffle. I replaced the cream cheese and sugar with white chocolate, organic coconut milk, and butter. I kept the shredded coconut and vanilla bean, but wanted more kick, so I added coconut rum. A dip in dark chocolate and a shower of coconut and there it is, I haven’t changed the recipe since. Happy day...

Legend has it that chocolate truffles were created by accident. An apprentice to French chef Georges Escoffier attempted to make pastry cream, but poured hot cream into a bowl with chocolate chunks instead of the bowl with eggs and sugar. Out of anger, Escoffier hurled the term ganache (meaning ‘fool’) at the apprentice, then something beautiful happened. As the combo solidified, the master worked the pliable mass into small rounds, rolled them in cocoa powder, and created what looked like luxurious mushrooms that grew near roots of trees in certain regions of France and Italythe much sought after truffle. And the rest, as they say, is history. Just want to say that we’re so happy to be among all the ganaches out there turning hot cream and chocolate into magic!

Now the backstory: I remember the day my dad taught me how to tie a tie like it was this ...morning. The scent of his Acqua di Selva aftershave still so freshly fragrant in my mind. I was confused as hell as to how to tie that damn thing, but I wanted to get it right and make him proud. After twelve years of catholic school, I got it! Fast forward to becoming a chocolatier and Loren trying to teach me how to tie a bow on a box of our truffles. I went into auto pilot and this necktie bow was the best I could do! Everything was black and white. Clouds in shades of grays running through each other in fast motion. Wind blowing all around me, some warm, some cool, like it couldn’t make up its mind. Trees in the distance, their leaves shimmering like diamonds. My heart was racing. I was cold. Scared. Looking out all I saw was dark water ready to swallow me up. I was a skinny little kid standing alone on the edge of the wooden dock, in a panic, and the world was frightening, as if everythi...ng around me had eyes and was staring at me. Floating on a giant raft next to the doc was my dad, brothers, sisters, all there, waiting for me. Then I heard a voice say, It’s okay Tommy don’t be afraid, I’m here, you’re going to be okay. It was my mom, and her arms were reaching up to me, outstretched, waiting for me to jump into her lap so she could catch me. Nothing is going to happen to you I promise, just jump, I’ll catch you. With everyone’s voices poking at me, my mom’s voice is the only one that I remember. My toes clenched tight on the lip of the dock, my legs shaking, my lips shivering, I looked into her eyes and I leapt into her arms like a frog leaves a rock. I landed in her lap and she folded me in her warmth as she wrapped me with a hug and said, See, I told you I would catch you Tommy, it’s okay. You’re going to be okay. The year was 1967, I was 4 years old. This was the first memory I have of being alive. And I felt safe, and warm, in my mom’s loving embrace. And that’s who she was, a protector, always making sure everyone else was taken care of. She never wanted anything. And through life's darkest hours she was a beacon of strength and hope. She lived and breathed every day of her life with humility, empathy, and respect. She was our role model, a warm loving soul who touched everyone she knew. This Mother’s Day is unlike any other we’ve experienced. If you’re lucky enough to have your mom by your side, then hug her tight! And if you can’t be with your mom, my wish is that you close your eyes and imagine how you’ll feel on the day you leap into her arms and she wraps you in her warm and loving embrace. We all come from the same mould my friends. Whether we’ve been cast in dark, white, or something in between, we need each other more than ever if we’re going to keep on hopping. To that end, in good conscience and concern for our valued customers and team, we will temporarily close our New Hope, PA, and Stockton, NJ, retail locations effective Sunday, March 15, 2020. We will do our part in closing for a short while as Governor Tom Wolf of PA has requested. We will monitor the... situation closely and announce our reopening when responsibly safe to do so. In the meantime, WE WILL CONTINUE MAKING CHOCOLATES in our studio. We have always run our chocolate studio like a surgical room. Every day we follow best hygiene practices like we are performing surgery, right down to the ground. Literally, no one can enter the studio without surgical booties. We are clean freaks and proud of it. We will be opening our doors again very soon with full-on Easter and Passover chocolates, macarons, and all the good stuff you love. Love cinnamon? Coconut? Philadelphia Cream Cheese? Vanilla bean? Then our O’Mac Irish Potato macarons were made for you. Philadelphia lays claim to originating the Irish Potato, a St. Patrick’s Day confection. Popping up this time of year in candy stores and supermarkets, this traditional confection takes all of those ingredients (plus powdered sugar) and shapes and rolls them in cinnamon to resemble tiny potatoes. We’ve baked cinnamon into our soft gluten free almond meringue cookie shells to add another layer of ‘oh man!’ So if you adore cinnamon and coconut as much as we do, you’re gonna love these macs! @ Ferry Market

We are nothing in this life if not for the generosity of others. As I reflect on the decade passed, there are stars in my universe whose light has changed my life and I need to share. I've nestled myself in the middle of these incredibly spectacular human beings for no other reason than this: they are the profoundly talented pillars on which my foundation as a chocolatier, and as a person, is built. From left to right, meet my lucky stars. Julian Rose taught me everything ab...out making ganache, that beautiful perfectly silky smooth emulsion of heavy cream and chocolate that brings tears of joy. Not a ganache goes by that Julian isn’t on my mind. Melissa Coppel has fundamentally, single-handedly, forever changed with the way I think and the way I work. A class act whose inspiration colors my world like no other. Christophe Michalak may not remember me, but I will never forget his artistry and brilliance, especially when it came to macarons. He assuaged my fear, so making thousands of macarons now is just like second nature. Being in his presence and watching a master at workpriceless. James Sciascia, my dad, my biggest fan, the bravest guy I know, taught me how to work really hard, like manual labor hard! But that was the precursor to 18-hour days, so now all work seems like play. Edith Sciascia, my mom, who is with me in spirit now, passed on to me her passion for pasty. Making eight desserts for every Sunday dinner for decades was pure bliss. Her artistry, work ethic, humility, and empathy were the ingredients that made her wonderful. Kriss Harvey, a gentleman, scholar (he wouldn’t say so), and a comedian with whom I became instant friends, is a chocolatier’s chocolatier whose generosity knows no limits. The knowledge he imparts I use every, single, day! Jerome Landrieu, another class act who works like a surgeon. His work is precise, pristine, and filled with passion. His energy, contagious; his methods, like clockwork, all what keep me ticking. Dennis Kuronen, my college professor, no longer with us, but his voice lives on: What’s your concept? That question is what drives me everywhere. Thank you stars. I am humbled and profoundly grateful.

As I look into the night sky, more than I care to admit, I’m blown away and brought to tears just about every, single, time. There are at least 250 billion stars in our Milky Way Galaxy which is traveling through the universe at 1.3 million mph and is just one of at least one hundred billion galaxies in the observable universe. How can this not blow your mind. How can we be alive, right here, right now, at this very moment in time... Mesmerized by it all and overtaken with ...awe I am each and every single day of my life. I question. I wonder what it's all about, this crazy, beautiful, messy, inspiring, painful, delicious thing we call life. I’ve said that, and said this a thousand times before, how we need to question everything and live to seek the answers to the burning questions that keep us ticking, that keep us up at night, that make us get out of bed in the morning, that make us who we are, that make us love and laugh and cry. I have been incredibly fortunate to spend my days in our own little universe creating chocolate bonbons, truffles, bars, barks, macarons galore and more. It is an honor and a pleasure to share this all with you and to be on this journey with you as we barrel through the universe. With a hand-shake, hug, smile, tear, laugh, or a like, share, comment, or an OMG!, please know that I will forever be grateful for your unwavering support and love along the way.
