Located on the second floor of the Desmond House, the Gibbons room is named after James and Deborah Gibbons, who moved to Bird-in-Hand from Chester County and built the Beechdale farm that played an integral role in the underground railroad. Yellow Phase Whoopie Pies: After 70 days, Lancaster’s stay at home order is set to expire on Friday June 5th as we move into the yellow phase. We would like to celebrate by debuting a lemon-flavored whoopie pie made with fresh lemon and butter cream filling. Did you know? Bird-in-Hand once hosted a very popular raceway. Central Speedway was in operation from 1935 to 1938 and hosted two Indy 500 champions who regularly raced here. Witmer Room Located on the second floor of the original inn, the room was named for John Witmer, who owned the property from 1768 to 1775.
