It's not every day that a new cheese comes along. A lot of R&D goes into each batch of an experimental variety before it's sent out into the world to get realit...y to match the cheesemaker's vision. At long last, we're sharing our latest cheese with all of you! Ola is a hand-formed lactic bloomy rind made with our pasteurized cow's milk and coated in one of two spices: tangy, deep-burgundy sumac, a staple in Middle Eastern cuisines, or espelette pepper, a French Basque pepper with a fruity flavor and mild heat. We love Ola for the way its fresh, lactic flavor profile plays with the spices on its rind as well as its cloudlike yet rich and creamy interior. Serve it on a cheese board with kalamata olives, roasted red peppers, Medjool dates, and a crusty artisan loaf with a good grassy extra-virgin olive oil to drizzle on top. Or toss a salad with roasted beets, crisp greens, and zippy vinaigrette before topping it with slices of Ola for a healthy, filling lunch.
