The extensive and laborious appassimento process. These grapes are carefully placed at the beginning of August where they are observed and cared after for a month as they dry in the sun.

A great pairing for this wine: Mushroom "Farrotto"! We used a cup of Pinot Grigio in the dish and then savored a couple glasses with our meal!

It's that time of the year again! The harvest starts in the early morning hours and typically will last all day long. Grapes are hand picked and only the best bunches are chosen.
