Chris recomends: Bouillabaisse [BOOL-yuh-BAYZ] A celebrated seafood stew from Provence, made with an assortment of fish and shellfish (clams, mussels, shrimp, scallops and fish), onions, tomatoes, white wine, olive oil, garlic, saffron and herbs. The stew is ladled over a thick slice of toasted sourdough bread. We build our rich stock by stewing and reducing a variety of fresh fish bones that are are selected for imparting a rich flavor and texture to our broth. On the rare occasion that I've discovered a restaurant that serves this dish, none has compared to our rendition.
