If you don't want to reach through the screen and swipe one of Mad Catter's Italian angeletti holiday cookies, well...you might be mad. Recipe below! ... Angeletti- Italian holiday cookie... 1 stick of butter, melted and cooled 3/4 cup granulated sugar 1/4 cup whole milk 1 1/2 tsp vanilla extract 3 large eggs 1 tbsp of baking powder 1/4 tsp of salt 2 cups confectioners sugar 4 1/5 tbsp water 1/2 cup candy sprinkles 1. Preheat oven to 375. Grease 2 large cookie sheets. 2. In a large bowl, whisk butter, granulated sugar, milk, vanilla, and eggs until blended. In a medium bowl, mix flour, baking powder, and salt. Stir flour mixture into egg mixture until evenly blended. Cover dough with plastic wrap and let stand 5 minutes. 3. With floured hands, shaped dough into 1 inch balls. Place balls, 2 inches apart, on prepared cookie sheets. 4. Bake cookies until puffed and light brown on bottoms, 7 to 8 minutes. With wide metal spatula, transfer cookies to wire racks to cool. 5. When cookies are cool, in a small bowl, whisk confectioners sugar and water until blended. Dip top of each cookie into glaze. Place cookies on wire racks set over wax paper to catch any drips. Next Saturday was supposed to be bout day with Hogtown Roller Derby but we had to cancel because of Covid-19 We can't skate against them but we can still compete!
