Avenue Cup Cafe 07.11.2020

On my way out, until I’m back again. I’ll be Sharing some secrets!!!! Quinoa/ Lentil Taco filling Prepare quinoa: You’ll need. ... 1 tsp olive oil 1/4 cup of red onion 1 cup quinoa 1/2 cup salsa 2 cups vegetable broth Heat oil in saucepan, add onions , cook until browned. Add quinoa, salsa and broth, stir to combine. Bring to boil, cover and reduce to simmer for 20 minutes. Remove from heat. Fluff with fork. To complete taco filling you’ll need: Prepared Quinoa 1 1/2 cup of brown lentil m 1/3 cup of nutritional yeast 1 tblspn chili powder 2 Teaspoons cumin 1 teaspoon coriander 1 teaspoon smoke paprika Salt and pepper to taste. ( 1/2 cup each of pinto and black beans optional) 1/2 kilo of corn tortilla Avocado Lettuce Tomatoes Salsa verde or chunky salsa Sour cream (vegan or diary depending on diet) Preheat oven to 400 degrees. Line pan with parchment paper In a large bowl combine first 9 ingredients, stir to make sure ingredients and mixed evenly. Transfer contents of bowl into pan, bake on center rack for 30-35 minutes, stir occasionally. Serve immediately on Warm tortillas, add your favorite taco toppings and enjoy!!

As I prepare to end this chapter and close Avenue Cup Cafe’s doors. I find myself overwhelmed with emotions. Where to start? How do I sum up the last three years in one post? I guess, Let me start by saying Thank you and see where it goes from there. Thank you to every single one of you who have supported me down this path. Thank you for your loyalty, your love , care, conversations and your down right honesty. Thank you to every customer who has ever walked through those ...doors and spent their time and money on my dream. Most importantly, Thank you to Miguel for renting this space and giving me the opportunity, confidence and the visions to turn it into something I had never thought was possible for me. (And tables, lighting and colors, I’m horrible with that stuff ) The last three years have been, unimaginable. The people I have met, the things I have learned, the loses I’ve endured, the compassion I’ve gained. It has all been more than I could have asked for. When Avenue Cup first opened, I had no idea what I was doing. I had no restaurant experience, never owned a business before, but I figured it all out along the way..... and then had to refigure it out again and again. 3 years and hundreds of people later, I know I did my best. I’ve built relationships and bonds that will be everlasting. I’ve gained knowledge and experience beyond any measure. However, I’ll miss the conversations the most. One of the things I loved most about what We created is everyone always felt so comfortable, like home. People would often tell me they didn’t feel like they were going out to eat, they felt like they were headed to a friends house to hang out..... The love, warmth and complete rawness was real and will be missed. To run with our art show theme, you all have pieces of my heart. To say good bye, myself and Becca will be hosting a month long art show/ autism fundraiser. If you get the chance. Hi All! Please join us for Avenue Cup Arts/. Avenue Cup Cafe's Pieces of my HeArt! This event is very important to us for many reasons. One of them being that for this show we will be donating money to Autism. A cause very close to my good friend, Melody Brogan who just happens to be the heart of Avenue Cup Cafe! We have many things planned such as a... - Donation jar for the Eagles Autism Challenge. - Sensory art table - A display of art created by children on the spectrum - Speaker on Autism from CHOP The artists participating in the show will also be given a wooden puzzle piece ( the symbol of Autism ) to create a piece of art for this very special cause. Melody and her partner Miguel graciously gave me the incredible opportunity of curating art shows at their cafe. And for someone who had never curated before, they put their faith in me that I could somehow pull it off and by a miracle, we did! I am eternally grateful for both Mel and Miguel's friendship and for all the encouragement they have given me in this venture. " Pieces of my HeArt " will actually be our 5th and final show together at Avenue Cup Cafe, as they will be shutting their doors on February 29th. We will have a closing reception for the show as well as the cafe on that day ( Feb 29 ) starting @12:00pm and running throughout the day until we can bring ourselves to actually say goodbye! In the meantime we're gonna go out with a bang!!! On Friday, February 7th we will have an Opening Reception for " Pieces of my HeArt " @6:00pm - 10:00pm @ Avenue Cup Cafe located at 932 E Passyunk. We will have a spread vegan delights provided by the cafe. There will be a selection of free wine and beer for 21+ Coffee and water will be available as well as various other drinks and baked goods for sale! Among the other various planned activities and weather permitting, Artist Abigail Vettese will also do a fire performance Spinning helio staff and fire fans! We of course will also be showcasing an incredible group of local and emerging artist
