Great insurance warrants you the right to a spicy life! So we've got 3 words for you this Saturday: Cauliflower Garam Masala. Our version of this flavorful dish is rich and creamy, yet light, healthy, and incredibly easy to make. You did say you wanted to spice things up this year, right? INGREDIENTS 20 oz of cauliflower in medium-small florets 1 large white onion, diced... 6 cloves garlic, minced 1/2 inch cube of ginger (skin removed) 1/2 green jalapeno 1/2 tsp mustard seeds 1 1/2 tbsp cooking oil 1/2 cup fresh cilantro, loosely packed + garnish cup of cashew milk 3 medium vine-ripe tomatoes, sliced 1 medium red bell pepper sliced with stem, and seeds removed 1 cup (about 13oz) of coconut milk 3/4 tsp garam masala 1/2 tsp ground coriander 1/4 tsp ground turmeric 1/2 tsp ground cinnamon 1/2 tsp salt add more if needed to taste Chili powder - as needed for spice (optional) INSTRUCTIONS In a large non-stick saute pan , heat 1 tbsp cooking oil on medium heat . Add the mustard seeds and fry for ~30 seconds until sizzling and nearly popping. Immediately add the ginger, minced garlic , green jalapenos (if using), and diced onions . Leave on medium heat until onions are fully cooked. In a food processor or mixer, add tomatoes , all spices, and the content from the pan. Then, blend on high until completely pureed into a smooth sauce. You can use a little bit of cashew milk if the mixture is too thick to blend. Pour the sauce from the mixer back into the saute pan, heat on medium-low for about 8 minutes . Then add in the coconut milk and mix until well. Finally, add the cauliflower and red pepper and cook uncovered for about 15 minutes on medium-low heat or until the cauliflower is soft and cooked yet still maintaining its shape. Adjust the thickness of the sauce with cashew milk and season with additional salt if needed. Let it simmer for 10 min, turn off the heat and garnish with some fresh chopped cilantro. Enjoy hot with some rice, Naan, or favorite tortilla.
