My Healthy Cleaneats Recipe of the Week Three Cheese Shrimp & Green Bean Pasta 1 lb cooked, deveined shrimp... 1 lb green beans 2 lb olive oil 1 tbsp minced garlic 1 tsp red pepper flakes 1 cup part skim ricotta cheese 1/3 cup Parmesan cheese 1/3 cup goat cheese 1 cup vegetable broth 3/4 cup red wine 2 cups of cooked pasta of choice (I’m a 90 second bag of pasta girl for quick cookin’ meals) In a large skillet, sauté green beans and garlic in olive until 1/2 cooked. Add shrimp and red pepper flakes and sautéed u til golden. Add broth and wine and stir until blended. Add cheese on medium heat and stir until sauce thickens and cheese melts. Add cooked pasta and stir. Serve hot sprinkled with Parmesan.#myqueststudio

Quest Clean Eats Recipe of the Week Crockpot Creamy Chicken & Cauliflower Bisque I had some leftover crudités, tomatoes and frozen chicken I didn’t want to go to waste, so I through it in the crockpot!... 1lb chicken breast 1 small head of cauliflower chopped 1 pint cherry tomatoes 3 cloves chopped garlic or minced One 10.5oz Can of Reduced-Fat Cream of Chicken Soup (I use @aldiusa Fit & Active brand) 1 - 2 cups chicken or vegetable broth 1/2 cup reduced fat milk or cream (I use @fairlife) Spices: garlic powder, salt & pepper, red pepper flakes to taste One bag of 90 second rice or Cauliflower Rice (2 cups) In a crockpot cook chicken, soup and broth with spices on high for 2-3 hours. Add cauliflower and tomatoes (add more broth or water if needed to make sure everything is just covered) and cook for another 1-2 hours until vegetables are soft. Scoop out chicken and use an Immersion blender to purée the vegetables and thicken the soup. Break the chicken into bite sized pieces and add back to the soup with the milk. To thicken and add more texture you can add a bag (2 cups) of rice or cauliflower rice. Season as desired. Serve hot and sprinkle with Parmesan cheese. #soup #dinner #myqueststudio

Resolutions seldom work because they are based on the type of person we’re tired of being rather than who we’re meant to become. Plus, resolutions can easily be broken, leaving no room for the process of growth. Last night’s Goal Setting party with these beautiful ladies was an amazing opportunity for us to put everything out on the table, reflect on who we are and who we want to become, and choose One Word to replace broken promises with a vision for real change. Choosing a single word as your theme for the year can give you clarity and focus to move toward the future rather than swearing off the past. Thanks ladies for sharing your fears and dreams with me! Our Adopt-A-Veteran Drive was a HUGE success this year! Today me and my little helpers delivered SIX truckloads of items to the St Francis Commons Veterans Homeless shelter. These items restocked all of their pantries with food left over and their laundry rooms. Each veteran received new bedding and towels (donated by Invenergy!) and a Christmas card with a $50 gift to Amazon (donated by the SGT Jan Argonish Ride and a $15 gift card to Dunkin Donuts (donated by all of you and... Quest!). Not only did our fitness community go above and beyond with donations, many also mailed in, dropped off or submitted monetary donations online, raising $1,035!! This money is being used to cater dinner for all 30 veterans and staff for both New Year’s Eve and New Year’s Day, and the leftover funds will be used for the Commons grocery fund. The veterans were SOOO Appreciative for all of your generosity! Thank you so much to everyone who donated items, time and money to help make their Christmas extra special this year. The St. Francis Commons Veterans Homeless Shelter is always so appreciative of your donations, but they are going to get a HUGE Christmas surprise when we show up tomorrow at noon! This is only a sneak peak of your generosity! We have FIVE trucks ready to load up tomorrow morning!
