Have you met Executive Chef Abou Kouyate? What made you want to become a chef? Growing up in Africa, my grandmother inspired me to support people in need who couldn’t afford to eat. She also encouraged me to add some flavor in dishes no matter how much food there was. ... How did you get started in cooking? I started cooking with my mom and grandma at an early age in my childhood. They always told me to learn so I could cook for my own family one day. After coming to America, I started teaching myself in my apartment and had friends and family taste my dishes. I also learned from the many chefs that I came across at the restaurants I worked at. What led you to The Imperial Restaurant? The Imperial gave me a lot of motivation for how I started and shared my goals and visions. The restaurant is located in a great city that I often visited because of the local farming and produce that is grown there. What is your favorite dish? My favorite dish came from my mom and has a potato green sauce. It can be cooked in a variety of ways, from vegetarian to chicken, fish or beef. It is a flavorful dish with many different seasonings. Chef Aboubacar Kouyaté was prohibited from entering the kitchen at his childhood home in the West African country of Guinea. His father believed cooking was a frivolous distraction to his education. Born and raised in Guinea, West Africa, Chef Abou Kouyate is a self-taught culinary professional. He started working for the United Nations at age 18 as a translator while attending school and cooking on the side. He also taught students at Walnut Hill College in Philadelphia.
