Our Chocolate Makers are busy molding dark chocolate logo medallions for Longwood Gardens !Last winter we collaborated with Longwood on their beautiful holiday display, which was confectionery themed! They’re lovely partners who prioritize small, local relationships (even during a global pandemic)!
The Whirly Berley Bar is a confectionery masterpiece hidden in plain sight under decadent house dark chocolate! Before being dipped and topped, our candy makers cook up and layer chocolate nougat, chocolate caramel, house cacao nibs and local sea salt for a decidedly different chocolate bar.
This is an ad from our predecessor, William T Wescott, in the autumn of c. 1899. We’re all curious what Dewey Hazens and Cream Grapes could have been?Any guesses? 12 years after this ad ran, Edward Shane tookover the shop & business and made buttercreams his seasonal speciality.
Assistant Chocolate Maker, Rachel, is pulling a batch from our melanger, a machine used to grind roasted cocoa nibs down into a chocolate liquor. This batch will be used in our Dark Milk Pretzel Bar, made in collaboration with the Philadelphia Museum of Art.Turn up your volume to learn more about this process!

We’ve certainly made lemonade from six months of lemons! While our shop front has been closed to the public, we’ve been able to take the time to reprioritize our goals & reorganize our work spaces. Today we hauled our Selmi Chocolate Tempering Machine three flights up our 19th cent staircase to its new home.(Below caption & by Eric Berley) Making Moves on Monday.
